I would like some input from you all as to what would be a good time (on the weekends) to get us all together and play.

Anytime on Saturday or Sunday is a good time for me..

I suggest Saturdays at 12 PM CDT (6 PM London time)
I would like this to be a weekly event..

weekends are cool to me... sundays are better coz on saturday afternoon I have choir rehearsal

Sundays would be better for me because I work 8-5 mnt time on Saturdays. If this changes, which I hope to God it does, I will let you know :P
